Tony's Tip: Chicken salad

DORCHESTER (WAOW) -- We've all been there, when you have to bring something to a party and you still haven't decided on what to make.

Newsline 9's Tony Schumacher has an idea. Why not bring a delicious chicken salad?

Here's Tony.

"Hey do you enjoy a good chicken salad sandwich? I know we do. And it's kind of an old favorite. Here's an interesting twist on the recipe that maybe you've never tried. With about 3 pounds of boneless, skinless chicken breast, put it in a marinade of about 2 cups of pineapple juice, add some soy sauce. Let that sit overnight in bag in the refrigerator.

"The next day you come back and pour out the old marinade. Add some fresh pineapple juice and soy sauce. Put it in a sauce pan and boil it for about 15 to 20 minutes...until the chicken is tender and brown.

"Then, let it cool a bit and then shred it and that's about where we are in the process right there. That's shredded chicken breast. Now to that, we're going to add some mayonnaise, about a cup and a half. And just stir that in. If you want to use low fat or miracle whip. something like that. No problem.

"To that we have some diced green pepper. Some chopped grapes. And we've also seen this recipe done with chopped onions. We don't really care for onions all that much so we decided to substitute them with other things. Right here we have some chopped celery. And we have some walnuts. Why don't you go ahead and pour that right in Kathy?

"It turns out to be a pretty good sized salad by the time you're done adding all of that much. And then we have some seasonings to pour in as well. We're going to have some garlic salt. Some pepper. Italian Seasoning. Some dried basil and a little bit of salt. So just get that all stirred together and those aromas are sure smelling good. there's something about pineapple juice, soy sauce and chicken, mixed with all of this good stuff. That is very inviting.

"Then you go ahead and get yourself some good sandwich bread roll. Maybe some nice lettuce on there. Go ahead and scoop yourself a serving. Maybe a little more there; that's kind of weak, huh Kathy? There you go. That looks absolutely delicious. You've got your self a great sandwich. This should make about 10 servings by the way so if you got a little dinner party, maybe make a chicken salad treat."
