Rhubarb Muffins

1 ½ cup brown sugar
2/3 cup oil
2 eggs
1 cup buttermilk or soured milk
2 teaspoons vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts
2 cups rhubarb, finely chopped
 
Topping:
            ½ cup brown sugar
            1 teaspoon cinnamon
            ½ cup chopped nuts

Combine the brown sugar, oil, vanilla, eggs, and buttermilk; mix well.  Stir in the flour, soda, salt, nuts, and rhubarb.  Spoon into greased muffin tins.  Make the topping by mixing together the brown sugar, cinnamon, and chopped nuts.  Sprinkle on each muffin.  Bake at 350 degrees for 25-30 minutes.  Makes 24 muffins.
