Spinach, Tuna, Tomato, and Radish Salad


2 cups baby spinach leaves (or other salad greens)

1 can tuna, drained

5 to 6 radishes, sliced

2 to 3 ripe tomatoes, cut in quarters

1 tablespoon, extra virgin olive oil

Juice of ½ lemon

1 tablespoon parmesan cheese


Arrange washed and dried spinach or greens on salad plate.  Put tuna in the middle of plate.  Arrange tomato wedges around the edge, and sprinkle radish slices over.  Drizzle salad with the olive oil.  Then squeeze the lemon juice over all.  Finally sprinkle on parmesan cheese if desired.  You can serve with extra lemon slices to squeeze on when eating if desired.
