Artichoke Bruschetta

•2 large artichokes, cut peeled and blanched

• 2 leafs of basil, chopped

• ¼ cup finely chopped red onion

• 4 cloves roasted garlic, chopped

• Drizzle of extra virgin olive oil

• Salt and pepper to taste

2 slices of Italian Toscana Bread or a Baguette, drizzled with Extra Virgin Olive Oil, salt and pepper and grilled. Once the artichokes are blanched and sliced, toss them with extra virgin olive oil, salt, pepper, crushed garlic and roast them on a sheet pan at 40e degrees or until caramelized. Once caramelized, toss with all other ingredients and season to taste. Top grilled bread with the artichoke mixture, finish with a drizzle of extra virgin olive oil.
