Greenwood Hills offers up Fat Tuesday menu

WAUSAU (WAOW) - The last hurrah before the season of Lent is here, Fat Tuesday.  That means parades and parties and lots of Cajun food on the menu.

Greenwood Hills in Wausau offers up a variety of from gumbo to crawfish.  This is the first year they offer up the Mardi Gras menu.  

Dave Bartram/Executive Chef: "That would be Jim Gitten here, he made it famous in Stevens Point at Silver Coach. Now he's here to spread the Fat Tuesday tradition."

Jim Gitter/Interim Chef: "The celebration of good food before Ash Wednesday."  

Mardi Gras literally means "Fat Tuesday" in French. 





It comes from the tradition of slaughtering and feasting upon a fattened calf on the last day of Carnival.

It has roots in the Christian calendar as the final party before Ash Wednesday and the beginning of Lent.
