Winning recipe benefits Wausau food pantry


An award-winning recipe will help fill the shelves of an area food pantry.

The Neighbor's Place in Wausau will receive $4,781 worth of food. That's after a recipe penned by Kronenwetter's Kam Aures took first place in a competition sponsored by the Roundy's Foundation. Facebook voters picked her peanut soup over three other recipes.

"Without them, we wouldn't have the food to be able to hand out to the families that come to us," said Neighbor's Place executive director Tom Rau. "So I think Kam's entering this recipe in this contest is just another perfect example of what people here in our community can do."

Rau said he made the soup himself, finding all but two ingredients on the pantry's shelves.

Kam's recipe for peanut soup:

3 T canola oil
1 clove garlic, mince
2 celery ribs, diced
1/2 small onion, diced
1 green bell pepper, diced
28 oz. can diced tomatoes
8 C chicken broth
1 C peanut butter
1/2 C rice
Dash of chili powder
Salt and pepper, to taste

Saute garlic, celery, onion and bell pepper in oil for 3 minutes. Add tomatoes, broth, chili powder, salt and pepper. Simmer for 35 minutes uncovered. Add rice. Cover and simmer for 15 more minutes. Stir in peanut butter and serve.
