SPECIAL REPORT: Made in Wisconsin – Nueske's

WITTENBERG (WAOW) -- Nueske's Applewood Smoked Meats is no stranger to plates and stomachs across central Wisconsin. But the product itself has quite a history.
Bacon. Ham. Sausage. You name it – Nueske's has it.
"The food is fabulous," said customer Jan Metzdorf from Chippewa Falls.
“Just coming in here, the smell alone is wonderful, but the products are really good," said Linda Phelps from New Berlin.
Nueske's Applewood Smoked Meats has been around for more than 80 years. The Nueske family came to Wisconsin in 1887, and with them – European skills of spicing and smoking meats.
Fast forward to 1933 when R.C. Nueske couldn't find anything as good as the family recipe.
"They had these recipes that they had been using for smoking their meats personally for the family for a long time," said Nueske's Marketing Manager Megan Dorsch.
This was during the depression – times were tough. So R.C. Nueske hit the road to earn some money.
"He started smoking the meats and he started putting them in the back of his truck, and drive around to the resorts in northern Wisconsin and try to sell his wares,” said Dorsch. “And people really liked it and they started buying the applewood smoke meats and it became pretty popular."
When the Nueske family business started in 1933, they only had one smokehouse to smoke all of their products.
"In the 80's we moved up to our current location where we have our smokehouses today," said Dorsch.
The methods have stayed the same.
"Our bacon is really unique because we smoke for a full 24 hours. A lot of places, you go to the store, pick a package out of the cooler and see that it's double smoked -- sometimes that can mean two hours and two hours,” Dorsch told Newsline 9. “24 hours is a long time to smoke in the industry and that's what gives it its really good flavor."
"I think the way they smoke the meats is different than what we've been able to find -- this just appeals to our taste buds," said Phelps.
Those recipes are still a secret today – so secret, they kept our camera away from the smokehouse.
Nueske's sells its products in all 50 states. And if you really want a bite of the action – you don't even have to leave your house.
"You can order into any home in the country and have our bacon and hams delivered to you," said Dorch.
It doesn't matter if you have it delivered or get it in the store – everyone has their favorite.
"My favorite product, oh my goodness, I just discovered Canadian bacon. Oh, this is really good, really,” Phelps told Newsline 9.
"I would say, of all the Nueske's items, the bacon is definitely the most popular, but especially during the holidays we do go through a lot of hams and turkeys too," said Dorsch.
