Winter warm-up foods

The weather outside is frightful, but a good hearty meal can be so delightful.


Newsline 9 stopped by Back When Cafe in Wausau find some winter warm up recipes.


Beef Short Ribs with Cranberry Port Sauce

-Makes 6-8 Servings

-Slow cooker low 8-10 hours

-Slow cooker high 4-5 hours

or

-Oven 350 degrees: 3 1/2 to 4 hours (ready when meat falls apart when poked with a fork)


Recipe

3-4 tbsp. cooking oil

4-5 lbs. boneless or bone in beef short ribs

1 large onion, chopped

5 medium carrots, chopped

1 14 oz. can whole cranberry sauce or (3/4 cup homemade cranberry sauce)

6 cups beef broth

1 tsp. dried rosemary

1/2 tsp. dried thyme

1 garlic clove, chopped

1/2 lemon

1/4 cup port wine (not tawny port) (can substitute apple juice)


Rub Beef Ribs with kosher salt and pepper

Brown meat in dutch oven (or frying pan if its going into a slow cooker)

Add all the ingredients to pot including the 1/2 lemon, do not peel it, just add the whole piece

Salt and pepper to taste

Cover and cook until tender

Remove lemon and discard it

Remove cooked ribs

Puree sauce and thin water or more broth the desired consistency

Served over mashed potatoes, rice, polenta, or pasta.


Creamy Polenta

-serves 6


Recipe

4 cups water

4 cups cream

3 tbsp. butter

2 tsp salt

2 cups polenta

1/3 cup Parmesan cheese


Use large sauce pan

Boil water, cream, butter to boil

Add salt

Whisk in polenta for 3 to 4 minutes, to prevent lumps

Cover and simmer 45 minutes, stirring every 10 minutes

Polenta should be smooth, thick and creamy

Can be made ahead

Reheat

Add water or milk to desired consistency


Maple Glazed Pecans

-makes 1 cup


1 cup pecans (4 oz.)

2 tbsp real maple syrup

sea salt


Preheat oven to 375 degrees

Lightly oil 2 baking sheets covered with parchment paper

In small bowl, combine the pecans and the maple syrup mix gently

Spread pecans in a single layer on one of the prepared baking sheets

Roast in oven, stirring once, until the syrup is bubbling, about 5 minutes

Remove from oven and spread glazed pecans onto other prepared baking pan, spreading them out

Sprinkle with sea salt and cool

Can be made ahead and stored in air tight container
