GARDEN GOODIES: Blackberry pie


Chief Meteorologist, Justin Loew, served up a delicious dessert to the Wake Up Wisconsin crew for this week's Garden Goodies.

He made blackberry pie out of blackberries he picked from his own garden.

Justin's recipe:

This is for 1 deep dish 9-inch pie. I usually use the store bought crusts. They come in packs of two. I put the pie filling in one, and then I use the other crust as the top layer.

3 to 4 cups of blackberries. I usually measure by just dumping the blackberries into my pie crust/pan until it is full, then I take those out and mix them with the other ingredients before putting them back into the crust/pan.

6 tablespoons of corn starch

1/2 cup sugar, 3/4 cup Splenda (or just use 1 to 2 cups of sugar, if you don't like the artificial sweetener. 1 cup of sugar and you will taste more blackberry flavor. 2 cups if you like really sweet pie)

2 tablespoons melted butter

2-4 tablespoons coconut oil

Lightly mix the corn starch, sweetener, and butter in a bowl. Dump mixture into the crust. I then usually put some dabs of coconut oil on top of the filling here-and-there (about 2 tablespoons) so that it can melt into the pie while it is cooking. I think it adds some creaminess to the filling.

Put the top crust on, pinch the edges together, and cut some openings for venting while cooking. Some people use a fork for pinching the edges together. I usually just pinch it together with my fingers. Spread/baste softened coconut oil (or butter) on top of the crust and sprinkle with sugar and cinnamon. 

Bake for about an hour at 350°.
